Chinese Chili & Eco-Cookers at Dunwoody Fall Festival

Chili-MKNKserving

We went chili crazy in our first Chili Cookoff at the Dunwoody Fall Festival! I was up to my ears in beans, crushed tomatoes, chili powder and Asian spices on Friday night, with 5 gallons of chili on the stove.

While everyone else cooked one kind of chili in one big pot, we went overboard, in typical fashion, and my mom and I offered up 6 different kinds, that is, 6 gallons of chili (she made one gallon, I made 5 gallons)! We had Thai Twist, 5-Spice Beans, Chinese Chili Spaghetti, 5-Bean Vegetarian, Chinese Sausage and Indian/Curry Twist!

MK’s Chinese Chili Spaghetti was indeed a kid and crowd favorite. One toddler, barely able to walk, scarfed 4 servings and clamored for more with sauce all over his face!!  We did our own chili survey by asking folks to vote for their favorite flavors.

We had our own mother-daughter competition, too, of course. Needless to say, MK ran out of her chili spaghetti first. (She was accused of questionable marketing tactics. “Which one is least

spicy?” MK: Mine! “Which one is the most spicy?” MK: Mine! :)

Thermalpots1We also had a chance to connect cooking to sustainability by pointing out that October was Energy Awareness Month and that all five of our chili pots were innovative low-energy, enviro-friendly “Eco Cookers” from Japan, Taiwan and China. They used various applications of thermal vacuum technology and did most of their cooking “unplugged.” Read more in my article  Eco-Cooking Pot & Gift Idea

Born Again: Fusion Leftover Makeovers!

  • Leftover rice metamorphoses into great fried rice, burrito stuffing, Mexican stuffed peppers or chicken rice soup! Also good fodder for veggie burgers
  • Leftover pasta/noodles can be turned into Asian noodle soup, Lo Mein, pesto pasta, chili spaghetti, Chinese spaghetti, sesame noodles…
  • Leftover stir-fry is great with a little hoisin sauce and flour tortillas for express Moo Shu or Asian wraps at home!
  • Learn how to make weeknight veggie sushi, fast pan-fried spring rolls, 2-step fresh Thai basil rolls at our demos!
  • Lonely block of plain tofu or tempeh? Add salsa/tomato sauce, garlic, onions and make fast soy sloppy joes on multi-grain buns – you’ll never miss the meat!
  • Sushi doesn’t do well in the fridge overnight. I turned mine into a Sushi casserole –heated it up, topped it with soy sauce and creamy wasabi–not bad!
  • Take home that leftover curry sauce or soup base when dining! I add vegetables, tofu, noodles, etc the next day for a wonderful lunch or dinner. Less waste and stretches the sauce and dollars!

Come to my free Saturday Express Demos for fun tips, tasting and shopping list…

Country Asian Tapas hosted by Chinese Southern Belle

Our Country Asian Tapas event Sunday night, May 31 was a “smashing success” as one guest exclaimed. Held at Urban Oasis B&B in Atlanta’s historic neighborhood, Inman Park, new friends from around town (and from MD, OK, CA) mingled and munched over a dozen selections of Chinese Southern Belle Asian Tapas creations, including Plum Wine Sangria (couldn’t keep punch bowl filled), 5-Spice Roast Beef, “Keng’s Wings” Original Honey Braised Wings (they put me through college!) and local/organic Garlicky Greens Stir-Fry.

Big thanks to our partners–Sevananda Natural Foods Market; Slow Food Atlanta; Urban Oasis; New Tricks; China Cafeteria; Le Cordon Bleu College of Culinary Arts; and Chinese Southern Belle, LLC.

Everyone seemed to enjoy the fun, delicious evening making new connections and supporting “good, clean, fair food” (a portion of proceeds benefit Slow Food Atlanta).

Maybe this will become an annual tradition….Enjoy the pics!
